COURSE 1

Coconut Curry Mussels

PEI Mussels cooked in a green coconut curry sauce, garnished with bias cut scallions and a large grilled crostini toast point. Served inside a young coconut.

COURSE 2

Fried Pork Belly with a pickled watermelon

Braised then fried Hickory Nut Gap pork belly, served with watermelon rind chutney with chilies

COURSE 3

Smoked Duck Breast with spiced cilantro rice

Slightly smoked duck breast pan seared with crispy skin and cilantro infused jasmine rice

COURSE 4

Braised Short Rib with Mofongo

Short Rib braised in citrus and herbs served with Mofongo, made from green plantains mashed together with garlic and herbs.
